Chipotle Chicken Stir Fry

An awesome recipe to check multiple boxes:
1) Less than 45 minutes to prepare and cook
2) Something the entire family can enjoy
3) Extremely nutritious and healthy
4) High in Protein, Vitamins, and Minerals
It is preferred to use organic vegetables and chicken, but is not a necessity.
1 Tbsp Olive Oil
1/2 Medium Red Onion Chopped
1 Red Bell Pepper Chopped (Or combination of sweet peppers)
1 Cup Raw Broccoli
1.5 lbs Organic Chicken Breast
1 Packet Grill Mates Chipotle Pepper
Preparation (20 minutes):
1. Chop 1/2 Medium Red Onion
2. Chop 1 Red Bell Pepper
3. Mix Grill Mates Chipotle Pepper with 1/4 Cup Olive Oil and 1/4 Cup Water
4. Thin Slice 1.5lbs Chicken Breast and Place in a Bowl. Cover with Grill Mates Chipotle Pepper and let sit for 15 minutes
Cook (20 minutes):
1. Heat a Large Pan over Medium-High heat (no oil needed)
2. Toss the Marinated Chicken into the pan, and Stir-Fry for 10 minutes
3. Add the Chopped Onion after 7 minutes
4. Continue to Stir Fry the Chicken and Onions
5. Reduce the Heat to Low
6. Add the Chopped Bell Pepper and Raw Broccoli and Cover with Lid
7. Let sit for 10 minutes
8. Drain excess water then serve
Serve over quinoa, brown rice, or baked sweet potato and enjoy!
